Volume 12, Plate XXVIII / Mammalia (Mammals)
Kyloe or Highland Cattle
Possessing the Highlands and Western Isles of Scotland, this horned breed is rough, shaggy and wild-looking on native pastures but grows glossy and symmetrical on richer Lowland feeding, the favourite colour black, with round, polished, white-based horns marking a healthy animal. Easily fed and yielding rich excellent beef, immense droves pass annually to the London markets, where their hides, tallow, horn, blood and intestines also serve countless manufactures.
